PEANUT BUTTER OREO CHEESECAKE
Digestive biscuits crushed (Use Biscoff or Oreos) 200g
Unsalted butter (melted) 80g
Philadelphia cream cheese (full fat) 360g
Lightly whipped double cream or whipping cream 300ml
Biscoff biscuit spread – original or crunchy 400g
Cold water 2 1/2 tbsp
Gelatin 2 1/2 tsp
Peanut butter Oreo 1-2 packets
Extra cream for decorating (optional)
Take inch spring-foam tin or a mouse ring and lightly grease it with unsalted butter. After putting crushed biscuits in a bowl, add melted butter to it and mix well. Now you have to gently press the mixture over the grease tin evenly. Cool it in refrigerator till you have to make the cheesecake mixture. It is purely up to you either you want to use 1 or 2 packets of Oreos. As this one is proper 12 piece cake, cut a dozen (12) Oreos into halves and place in airtight container for later decoration. Cut remaining oreos into smaller chunks.
Put 2 1/2 tbsp of cold water in another but small bowl, add a gelatin and place the bown in saucepan. When gelatin dissolved, tunr the heat off and set aside.
Whip the Philadelphia cheese in separate large bowl, until smooth. Add dissolved gelatin in it and mix until smooth. Also add biscoff spread and mix till well combined.
Take another small bowl and whip the cream but make sure not to over whip it. Fold into the cream cheese mixture till combined.
Place the Oreos on top of cake leaving about cm away from the edge. Carefully pour the other one bowl of the mixture of cheesecake on the top. Use palette knife to spread and smooth the mixture. But try that your Oreos alignment do not disturb. Chill the cake for around 4-5 hours than remove from tin.
Cut into pieces and serve the well decorated peanut butter Oreo cheesecake. Enjoy!
